The Thai pineapple fried rice is a recipe that will satisfy your sweet-savory cravings. This cooked dish will make the melt-in-mouth food more realistically present. Thai fried rice with pineapple is a crowd-pleaser thus it can make a mouthwatering appetizer, thanksgiving food, or an ordinary whole-day meal.

Heat 1 tablespoon oil in wok until hot. Fry the garlic, chili peppers and shrimp until it is cooked and opaque. Remove from wok and set aside. Add 1 tablespoon oil to wok. Flash fry onion, bell pepper, turmeric, curry powder and fry for about 2 minutes. Mix in cooked rice and pineapple chunks and stir together.

Add peas, corn and pineapple and stir fry for 2-3 minutes until peas and corn are cooked. Add cumin, chilli powder, turmeric, coriander powder and soy sauce. Season with salt and white pepper. Mix it well so that it coats the vegetables. Reduce flame to low and add the cooked rice.

Heat ½ tablespoon of oil in a large skillet or wok on high heat. Add the eggs and cook without stirring for about 30 seconds. Then stir quickly to scramble and remove from pan. Add the remaining ½ tablespoon oil to the pan, stir in onion whites and garlic and stir fry for half a minute until fragrant.

Instructions. Heat oil in a wok. Once the oil is hot, add garlic, ginger and red chilli and fry for a few seconds. Add pineapple and bell peppers and saute for 2-3 minutes. Then, add spring onion, cashew nuts and saute for another 2-3 minutes. Later, add soy sauce, oyster sauce, lemon juice and cooked rice and mix well.

Step 4: Beat the eggs together with the rest of the ingredients in the wok. Step 5: Add light soy sauce, white sugar, salt, and yellow curry powder and thoroughly mix. Step 6: Add white rice and mix, breaking apart all clumps, to ensure every rice grain is coated with curry.

Mix in the sauces, sugar, curry powder, and pepper. Add rice and soy sauce, fish sauce, sugar, curry powder, and white pepper. Toss together for 2 minutes or until rice grains go from being wet with sauce to sort of caramelized. Add in the chicken and scrambled eggs and toss until combined for about 30 seconds.

Cook and stir, breaking up the clumps of rice with the metal spatula. Toss and mix to combine, making sure to scrape the sides and bottom, about 2 minutes. Add pineapple and cashews. Mound the fried rice to the middle, leaving half the wok empty. Add the pineapple and cashews in an even layer.

Set aside. Heat oil in a wok or large pan over high heat. Add onion and sweat for 1 minute. Stir in minced garlic, red bell pepper, green peas, and carrots; for additional 2 minutes on continuous stirring. Add the rice and cook for 10 minutes, stirring constantly. Pour in the sauce and the pineapples.

Run a knife around the edges leaving at least 1⁄2 inch (13 mm) from the edge. Then, cut the pineapple flesh three to four times across and once down the center. Scoop out the pineapple chunks using a spoon and drain the remaining juice. Smooth out the bottom surface of the bowl.

Preheat a large wok or a large cooking pan with tall sides over medium-high heat. Once the pan is hot, toast the cashew and set them aside. Add some oil and cook the diced onion, carrots, and bell peppers until softened. Once cooked and softened, make a little well in the middle of the pan and add garlic and ginger.

Cook until just fragrant, 30 seconds to 1 minute. Push the vegetables to one side and add the eggs to the pan. Cook, stirring occasionally, until scrambled and just cooked. Stir in the curry powder and add the cooked rice, tossing to coat. While stirring, season with the soy sauce, fish sauce, sugar, salt, and pepper.

Take them out of the wok and set them aside in a bowl. Put the pineapple and red pepper in the wok. Cook and stir constantly until the pineapple is caramelized (about 3 minutes) Add the cashews and stir fry for about 30 seconds. Put the shallot mixture back into the wok and then add the sauce you mixed in step #1.
