Weigh 150 g starter into the bowl of your mixer. Stir in 375 g cold water until the starter has dissolved. Add 475 g strong white bread flour, then use the dough hook on a slow setting for a couple of minutes until mixed to a smooth wet dough. (Meanwhile, feed your starter with 75 g cold water and 75 g bread flour).
