A Taste of Alaska Halibut Olympia

Mix bread crumbs, shredded parmesan, chopped parsley, paprika and melted butter and set aside. Cut halibut into 5- or 6-ounce fillet, layer caramelized onion on a baking dish pan. Place cut halibut on top of onions and then coat it with mayonnaise mix and sprinkle with bread-crumb mix. Bake at 350 degrees in a conventional oven for 10- to 12.

Preheat oven to 350˚F. Slice onion in half moons, sauté with one Tbsp. butter over medium heat until soft and caramelized. Put remaining 3 Tbsp. butter in 8X8 pan and put in oven until butter is melted. Place onions in pan. Rinse and trim the fish, salt and pepper both sides. Place fish in pan on top of onions.

Preheat oven to 375°F degrees. Pour enough melted butter in the bottom of a casserole dish to coat the bottom. Pour off excess and save extra butter on the side. Sprinkle minced shallots or diced onions over butter in casserole dish. Cut halibut into bite size pieces and arrange in casserole on top of onions or shallots.

At Olympia Seafood, we generally offer halibut in the size range of 20 to 60 pounds, (somewhere between 6 and 20ish years old), but it's interesting to note that halibut are the largest of all flatfish. The state record for Alaska clocks in at 459 pounds (1996) which makes our shop record of 128 pounds sound pretty tiny!.
