I'd recommend using the soul to make the greatshield of artorias, which imo is the best shield in the game. Ironically, it can tank Artorias' attacks like nothing. When you upgrade that shield to max, it's stability gets ridiculous. Paired with it having really high fire damage and it's as close to objectivily the best shield in the game.
