Jamie used an unusual method for cooking the chicken. He fries it in a big pan for a bit and then put greaseproof paper on top and then a smaller frying pan. On top of that he put a mortar and pestle for weight. I guess the idea is that it presses the chicken into the pan to cook it evenly. It did come out pretty crispy.
